THE VEAL KEFTA ‘PARTY’ SANDWICH

Ingredients

  • 9 veal keftas Fontaine Family
  • 2 artisan flatbreads (12.5’’ x 6’’)
  • butter as needed to toast the bread
  • 1 red onion, sliced into long strips
  • 1 large red pepper, sliced into long strips
  • 15 ml (1 tablespoon) Sriracha sauce
  • 185 mL (3/4 cup) grated cheese
  • olive oil and butter as needed

SPICED MAYO

  • 85 ml (1/3 cup) mayonnaise
  • 15 ml (1 tablespoon) Sriracha sauce
  • 5 ml (1 teaspoon) sesame oil
  • Mix the mayonnaise, Sriracha hot sauce and sesame oil in a bowl with a fork until smooth.

Preparation

  1. Preheat oven to 350°F (176°C).
  2. In a large skillet, heat butter and oil over high heat for 1-2 minutes or until butter begins to foam. Cook the keftas for 5 to 7 minutes, turning frequently. Reduce heat to medium and continue cooking for about 10-12 minutes or until internal temperature reaches 160°F (71°C). As soon as they are cooked, place the keftas on a cutting board and cut in two (or three) lengthwise. Set aside.
  3. Add oil and butter to the skillet and lightly fry the onions until golden brown. Add the Sriracha sauce to the onions and stir. Set aside.
  4. In the same skillet add the peppers and sauté 2-3 minutes. Avoid overcooking them so that they remain firm and a little crunchy. Set aside.
  5. Place the flat breads on a baking sheet.
  6. Butter the flat breads on both sides.
  7. Arrange the keftas flat on the bread and garnish with the onions and peppers. Top with the grated cheese.
  8. Finish by covering with the second piece of bread.
  9. Transfer to the oven for about 6-8 minutes or until the cheese begins to melt. Monitor the baking so as not to burn the bread.
  10. Let stand for at least 5 minutes prior to slicing the sandwich.

Side dishes

Serve with oven-baked sweet potato fries and a spicy mayonnaise along with a green salad.

Tips and Tricks

The keftas can be BBQed following the same cooking instructions in this recipe.
The sandwich keeps well in the refrigerator and can be enjoyed the very next day.
Ideal for lunch, picnic or a quick lunch on the go.
